Sweet & Savory Turkey Meatloaf

 

If you follow me on Instagram you know that I have just started to dive into the world of eating a diet that consists of low-carbohydrate foods that are high in protein and healthy fats. This type of diet is similar to Paleo, but is supposed to help kick-start Ketosis, which is where your body begins to burn fat due to it’s lack of carbohydrates. There is a lot more medical mumbo jumbo floating around about Ketosis, but I wanted to keep it very simple, and will continue to bring you recipes, and experiments, as I battle to cut through my health and fitness plateau.

This recipe is one that I have been making for a couple of years, and last week, my mother-in-law wanted to try to use turkey meat to make a meatloaf, so I helped her build it from scratch. Cory’s favorite is Papa De’s traditional meatloaf, and let me tell you, it is one of the most moist and delicious loafs of meat I have ever tried! This turkey meatloaf recipe is a lighter, savory and sweet version that even your manliest man can love.

 

Ingredients:

1.5 Lbs Ground Turkey

1 Tbs Ghee or Grass fed Butter

1 Large Onion

3 Garlic Cloves

1 Apple (I used Fiji)

1 Carrot

2 Celery Stalks

2 Eggs

1/2 C Cooked Quinoa

1/4 C Parmesan Cheese

2 Tbs Honey Mustard

1 tsp Dry Mustard

1 tsp Celery Seed

1/2 tsp Sage

1/2 tsp garlic salt

Glaze:

1/2 Cup Apple Sauce

1/8 Cup Honey

1 Tbs Dijon Mustard (optional)

Directions:

Preheat oven to 400 degrees. In a pan melt butter and add chopped onions until they begin to soften, then add garlic. Cook until both are soft and onion is translucent (This is optional as they do cook down in the meatloaf if they are put in raw). In a bowl combine turkey, cooked onion, chopped apple and carrot, celery, eggs, mustard and spices. In a separate bowl combine apple sauce, honey, mustard and set aside.

Form meat mixture into a loaf or in a greased loaf pan. Pour HALF of the glaze of the top and sides of loaf. Cover and bake for 30 minutes. Uncover, add the remaining glaze, reduce heat to 375 and bake another 30 minutes or until the internal temperature reaches 180. Let sit 5 minutes and serve. I like to plate mine with sauerkruat and sweet potatoes.
