Southwest Black Bean Burgers-Taylor Walker Fit

I get a little nostalgic about the black bean burger because it was the first time on my clean eating journey that I had to decide what to eat while out in the “real world”, aka the Jay-Z concert at BB & T in January. The Wilhelmina Fitness Contest Finals were a mere three weeks away and I was on a mission to be in the best shape of my life. Was a cheeseburger really going to make the difference in the way I looked? Probably not, but I knew it was a slippery slope. To my surprise there was a black bean burger on the menu and it was a char-grilled patty on a whole wheat bun, and I even let the french fries fall by the wayside.

 It was glorious!  Not only did you get the fire-grilled flavor, but the patty was dense and filled with delicious flavor. A few weeks ago Cory was at a work dinner and I did not feel like heading to the grocery store. I had black beans and avocado for topping and got to work. I was a little hesitant to give these a try, but they immediately exceeded very expectation I had. They also freeze really well. So, do not hesitate to make in bulk. They can be cooked stovetop, grilled or oven baked and because they are made with produce that can be found all year long…make them whenever you like!

Ingredients:

1 Can Black Beans rinsed, dried and mashed

1/2 Red Pepper-finely chopped

1/2 White or Yellow Onion-finely chopped

3 Cloves of garlic – pressed or finely chopped

1 Green Onion- sliced

1 Handful of Cilantro-chopped

1 Egg

1/2 C Oats-Ground in food processor

1 tsp Hot Sauce

1 Tbs. Chili Powder

1 tsp. Paprika

Coconut Flour For Coating

1 Tbs Olive or Coconut Oil

Whole Wheat Buns

Ingredients for dressing:

1 Avocado Mashed

2 Tbs. Water

1 Lime Juiced

2 Clove Pressed Garlic

Directions:

Mash black beans with a fork then add pepper, garlic, both onions, cilantro, egg and mix. Slowly add oats until mixture sticks together but still holds moisture. Add Chili Powder, Paprika, hot sauce and give one final mix. Make paddy and coat in coconut flour.

Dressing:

Mash Avocado and add water, lime juice and garlic. Mix together and set aside.

 Cooking Options:

Southwest Black Bean Burgers

Stovetop: Heat a Tbs. of coconut or olive oil over medium high heat for 3 minutes on each side.

Grill: Place tin foil on a grill and brush with olive oil. Cook 3-4 minutes each side.

Oven: Take  greased baking sheet and cook at 350 degrees for 10 minutes each side.

Post Cooking:

Add to whole wheat bun bottom or lettuce. Top with avocado dressing and hot sauce.
