Healthy Peach Inspired Dinner

Peaches are one of those things that only remind me of happy times. My grandmother would can peaches in Lancaster, PA where she lived with my grandpa. She would always have some ready to go as an afternoon refreshing treat or as a post dinner dessert while we were visiting. They were canned in a sweet simple syrup only to make the cold peaches taste that much more delicious to my little taste buds. As time passes only the good memories prevail, and although I would give anything to spend one more day with my nana and pop pop I am so thankful for the trail of happy memories they left behind.  Todays post is dedicated to them and inspired by the Summer Peach.

Peaches similar in size to the ones I used to get in college. There was a farm stand on our block the same year I was graduating. Summer peaches the size of my head. Juicy and delicious. I still remember them to this day. As I trolled the farmers market on Monday I stumbled upon peaches in a similar size. Large, Juicy and sweet. I grabbed four, but for todays dinner and dessert you only need one large peach or two smaller summer peaches. You want them to be ALMOST ripe. If they are too ripe they will not be able to withstand the heat of the oven or the frying pan for dessert.  On nights where Cory has work meetings I usually test recipes. Today, I bring to you one of my favorite recipes so far. Both Under 300 Calories!

Summer Peach and Goat Cheese Pizza with Peaches and Cream for dessert.

Personal Pizza Ingredients:

Peach Pizza Ingredients

  Basil or Regular Olive Oil For Brushing and Drizzle

1 Flatout Flatbread

1/4 Red Onion Sliced

5-7 Cherry Tomatos (Any Color) I like sweet orange

1 OZ Goat Cheese Crumbled

1 Grilled Chicken Tender Pulled

1/2 Large Summer Peach Sliced Thin

1/4 Cup Fresh Chopped Basil

1 Tbs Balsamic Reduction Or Heavy Balsamic For Drizzle

Red and Black Pepper To Taste

Healthy Peach Pizza Ingredients

Directions:

Preheat Your pizza stone in 350 degree oven. Top warm stone with Flatout and brush with basil olive oil. You can use regular olive oil. Bake for 7 minutes or until bubbly.

Bake Until Bubbles Appear

Remove from oven and top with all toppings, but only half of the basil. Bake until cheese melts and basil looks dry. Remove from oven and top with remaining basil, a drizzle of basil oil, fresh cracked pepper and a drizzle of balsamic reduction or really good balsamic vinegar. Oh! and of course some spicy red pepper.

Healthy Peach Flatout Pizza

Ingredients for Peaches and Cream:

Peaches and Cream

1/2 Large Summer Peach Slices. About 3-4 slices per guest.

1 tsp Coconut Oil

1-2 tsp Coconut Sugar

1 Kashi Whole Wheat Waffle or Other Whole Wheat or G-Free Toaster Waffle

1 Cup of Oikos Vanilla Frozen Yogurt

Cinnamon for Dusting

Directions:

Heat coconut oil in pan over medium heat. Sprinkle coconut sugar over peaches. Add peaches to pan and sauté them until warmed through and coconut sugar is almost caramel.

While the peaches are cooking toast a waffle. To assemble top waffle with 3-4 peach slices, 1 scoop of Oikos Greek Vanilla Frozen Yogurt and dust with cinnamon.
