This winter I acquired a great client, a Texas department store named Stage Stores. I worked with them last week for the fourth time, and after Yoga on a jetty and some sprinting on the beach at South Pointe park it was time for lunch. I ordered a salmon greek salad that was not only delicious, but it gave me the energy I needed to get through the day. You see; I had just gotten off of a red eye and only had time to shower, have bulletproof coffee and head to work. To say I was exhausted was an understatement (as per usual). So that meant bread and heavy carbs were off the table. I needed protein and a meal on that was on the lighter side, but what I got was more delicious than I could have ever asked for. It was light, yet filling and the spicy-tangy dressing was the perfect compliment. Yesterday, after class I was craving the same salad so I decided to  take a crack at making it at home, and I must say I was far from disappointed. It was delicious and might I add extremely nutritious, and I wanted to share my creation with you today!

Ingredients:

2-3 Cups Greens

(I used mixed greens, but romain or baby kale would be great)

1/2 Avocado

1 Vine-Ripe Tomato Sliced Thin

1/2 Cucumber

1 Tbs Capers

1/4 Red Onion Sliced Thin

2-3 Slices Nova Lox or Grilled Salmon

Dressing Ingredients:

I have to estimate here because I was just doing my thing in the kitchen, but I did use a ratio of 2:1 vinegar to spicy mustard.

1 Tbs Spicy HorseRadish Mustard

2 Tbs White Balsamic or Similar

1/2 Tsp Dried Dill (You can add more to taste)

Directions:

Wash and dry greens and add to large bowl. Slice tomatoes, cucumber, onion and top greens. Cube avocado and add. Top with 2-3 slices of salmon and capers. Drizzle with dressing and enjoy!

Feel free to add some olives, peppers and feta to this salad. A portion of grilled or baked salmon would work perfect here as well, but since the lox is already prepared it makes this salad super quick and easy. It is the perfect summer salad that will be filling, but it will not leave you with the bloated feeling we all dread during this warmer months. Enjoy!
