I hope everyone had an awesome 4th of July! We have had a ton of visitors lately so Cory and I took this weekend to relax, go on dinner dates and simply enjoy the Florida sunshine (in between the storms). We did some swimming, watched fireworks and had the best burger of our lives at Tap 42 in Fort Lauderdale. We even stopped for an afternoon delight of cappuccinos and napoleons at the Epicure Market.  It was the ultimate cheat meal. Worth every last calorie. Cheat meals are the key for me to stay on track. The best part is…there is always tomorrow. You shouldn’t beat yourself up if you have that slice of pizza or that cheesesteak. Instead, enjoy every last bite and start anew the next day.

I always keep my mornings the same. Even on the weekends. As I have mentioned in earlier posts,  my morning routine is extremely important to me. I wake up, oil pull, have a glass of warm lemon water and then eat breakfast. My weekly breakfasts on rotation include: Flax Waffles, Bobo’s Oat Bars with greens and an Egg, Chia Seed Pudding, oatmeal and most recently chia or hemp heart green smoothie. Cory is usually the curator of our weekend breakfast feasts, but this weekend I wanted to try something different. I had leftover sweet potato mashed from dinner the night before. I suggest that for this recipe.  This just makes cooking breakfast that much quicker. If not, here is an easy recipe. I added some of the comforting spices to them and fried them away in coconut oil. I love sauces, especially healthy ones. So that is where the dipping sauce came into play. Separately this breakfast is good. Together, these flavors are outstanding!

Ingredients:

1-2 Tbs Coconut Oil

1 C Mashed Sweet Potatoes

1 Tbs Organic Maple Syrup

2 tsp Cinnamon

1 tsp Nutmeg

1/4 C Ground Flax Seed

2 Large Eggs

2 Chopped Green Onions For Garnish

Sauce:

2 Tbs. Greek Yogurt

1 Tbs. Organic Maple Syrup

4-5 Dashes of Hot Sauce to Taste

Directions:

Heat Coconut oil over medium-high heat. Combine Mashed Potatoes, Syrup, Cinnamon, Nutmeg, Flax Seed and 1 Large egg. If consistency is too runny slowly add more flax until patty is easily formed. Add patties to pan and cook like a pancake. Meanwhile in a separate pan add coconut or olive oil to a pan and crack egg. Fry egg about 1-2 minutes then flip until white is cooked, but yolk is still runny. About 45 seconds. To a small bowl combine Yogurt, syrup and hot sauce. Plate with a swipe of sauce. Top cake with egg and garnish with green onion and black pepper. Enjoy!
