Hi guys! It is almost the weekend, and you know what that means, another chance for R & R! Woop woop! I wanted to get another post up this week because I will be heading out on a cruise line job for seven days, and likely will not be able to blog until February. Can you believe we are almost in February? That means spring is about to sprung and lighter options will be popping up on menus around the country. It has been absolutely gorgeous here in South Florida, and I am just trying to enjoy every last humidity-free ray of sunshine because I know that  the heat will be back in full affect before we know it!

Lox Recipe

As the grandchild of Robert Epstein and a Long Island native, a bagel and lox was a staple on our Sunday table; along with whitefish spread, everything bagels and all the fixings. I love to order a nova platter while out for brunch, but it can be pricey and since I am not a huge fish fan yet enjoy nova/lox, I try to buy a package to satisfy my cravings when they hit. You can scramble nova in eggs, top it on a salad or make an open face sandwich like I did here.

Quick recipes

The herbed yogurt spread is what truly elevates this dish and because I swapped the beloved bagel for a rice cake, this recipe remains low in processed carbohydrates and high in protein and flavor! You can make the spread ahead and keep it refrigerated for up to a week. Use whatever herbs you have and top it on anything and everything you make this week.

Let’s get down to business!

Ingredients: 

Herbed Yogurt Spread

1 C Greek Yogurt

2 Tbs of each herb used. (At least 3 different types. I used dill, parsley and green onion)

Juice of 1 lemon

1 Tbs lemon or red wine vinegar

Fresh cracked pepper

Directions:  Combine yogurt, herbs, lemon juice, vinegar and cracked pepper. Mix and set aside or refrigerate until you are ready to use.

Nova Sandwich

Lightly Salted Rice Cakes

Herbed Yogurt Spread

Red Onion

Capers

Tomato

Nova/Lox

Black Pepper

*** I also like to add cucumbers and a squeeze of lemon.

Directions:  Top rice cake with yogurt and toppings of your choice! It literally takes less than 5 minutes start to finish! Enjoy!
