I have been home in my own bed with my husband since Friday night, and it has been absolutely glorious! I literally have not been home for that many consecutive days of normalcy since JUNE…yes JUNE…nine months ago. My life has been an endless parade of airplanes, hotels and packing. Trying to find routine in all of the chaos has been really tough on me. I am such a homebody, and being able to cook healthy and delicious meals is so important for my soul, and something I have not been able to do in quite some time.

So that is what I did this week! It has been wonderful. I am off and running up to Tampa tomorrow for my first shows on the Home Shopping Network. If you happen to be awake at 6 AM Saturday and 4AM on Sunday check it out! This has been a project my agent and I have been working on forever. I am so excited, but also very nervous. So, I wanted to be on my A-game physically and mentally. Light, healthy and protein packed meals were on menu this week, and I can tell you what I can already feel a huge difference! No bloating, a clearer mind, all benefits of using food as fuel, but that doesn’t mean you have to sacrifice flavor.

I love shopping at Publix if I need small portions of meat. They have a really good selection of grass-fed beef or organic chicken, and since it is just Cory and I most nights I try to keep the packages small. Costco is also a great option for meat if you have many people to feed. They have plenty of options of grass-fed or even kosher meat that will be chemical free and great wild caught fish.

I love having Taco Tuesday, but how about burrito Monday? On the menu Monday was chicken burritos with black beans, fresh guac, sweet potatoes and a baby kale salad. I really love when Cory enjoys the healthy meals I create. The sound effects and numerous amounts of compliments make me happy. He works so hard, with many early mornings and nights on the road that it always makes me feel good when he can eat a good wholesome meal. These burritos will be something that everyone in your family will love.

Burrito Ingredients:

Whole Grain Wheat Wraps

1/2 C Quinoa

1 lb Chopped Chicken

1/2 White to Yellow Onion

1/2 tsp Chille Pepper or more for a little more spice

1/2 tsp Paprika

Salt and Pepper to taste

1 tbs Coconut or Avocado Oil

Cheddar Cheese

Directions:

Wrap tortillas in foil and place in a preheated oven. Cook Quinoa according to package. While the quinoa is simmering, melt oil in pan over medium heat. Add peppers and onions and cook until they begin to soften. Add spices and stir. Add chicken and cook through. If it begins to get dry add a little more coconut oil. Add quinoa, salt and pepper to taste. Set aside.

I served these burritos with warm black beans, cheddar cheese and homemade guac. Fresh guacamole is so easy to make. Try to stay away from the preservative filled packaged stuff. Here is an easy recipe! On the side we had sweet potatoes and baby kale salad dressed with olive oil and fresh squeezed lime juice. I would love to hear about how yours come out. Enjoy!
